Your Google Business Profile lets you select up to 10 categories. The first one (primary) carries dramatically more weight than the others. Google uses the primary category as the main signal of what your business does, and rankings for queries outside that category are much harder.
Choosing the right primary category is the single highest-leverage decision in local SEO. A cosmetic dental practice with 'Dentist' as primary will struggle to outrank a similar practice with 'Cosmetic Dentist' as primary, even if everything else is equal.
The category list is fixed by Google. You can't invent categories. Pick the most specific category that matches your highest-revenue service. If you don't see your service, see what your top-3 competitors are using.
